Chef makes world’s largest veggie Scotch egg using an ostrich egg

A chef has set a new world record for largest scotch egg using an ostrich egg - which took 90 minutes to boil.

Leigh Evans has made a savory treat weighing eight kilos (17.6 pounds) - including a 1.7 kg (3.7 lb) egg at its core.

His recipe included a kilogram (2.2 pounds) of grated cheddar cheese, two kilograms (4.4 pounds) of bread crumbs and nearly five kilograms ( 11 pounds) of peas.

The entire process took over six hours to complete with over ninety minutes dedicated to boiling the enormous ostrich egg.

A Scotch egg is a boiled egg wrapped in sausage , coated in breadcrumbs and baked or deep-fried.

Leigh, chef at egg producers Clarence Court, smashed the Guinness World Record for largest ever veggie scotch egg.

He made the egg out of his own unique pea, mint and cheddar recipe - creating an egg twice the size of his head at 8.3kg (18.3 lb).

Chef Leigh, from Corsham, England broke the record as part of Clarence Court's national vegetarian week (May 16-22) celebrations.

Leigh said: “This was a first for me, having not created anything so large in my cooking career.

''I always enjoy a challenge, and this was one that I really did enjoy doing.

"I am delighted to have broken a Guinness World Record title and have had enormous fun creating this much-loved picnic staple.''

A Guinness World Records adjudicator present during its cooking weighed in and confirmed the record using industrial scales supervised by two independent witnesses.
